About the Role: Ensures that all dishes are prepared consistently and according to standard Assigns responsibilities to team members and supervises performance, coaching and training where necessary Responsible for checking all incoming food items, making sure they are stored in the correct manner as per hygiene regulations To ensure that all mise-en-place for the assigned section is maintained at an appropriate level To ensure that all food safety and hygiene practices are in place Plans or participates in planning menus and utilization of food surpluses and leftovers, taking into account probable number of guests, market conditions, popularity of various dishes and frequency of menu. To develop and maintain recipes which allow the outlets to operate food and labour costs within the established budget. To monitor quality of dishes at all stages of preparation and presentation To discuss food preparation issues with Managers, Dietitians and kitchen and waiting staff To demonstrate techniques and advising on cooking procedures To implement all hygiene regulations as well as procedure explaining and enforcing hygiene regulations To identify training needs and plan training programs for the employees Salary range: 73K – 78K Qualifications To be considered for this role the candidate should possess the following: Minimum 2 years work experience as relevant Chef positions in a hotel or restaurant with good standards Certificate III/IV in Commercial Cookery or higher qualifications including a Diploma in Hospitality Management Effective trainer, experienced in the delivery of skills training Safe and accurate knife skills Knowledge and experience in a variety of different cooking methods This is your chance to work with exclusive clientele at a luxury hotel like no other.
