Experienced Head Chefs who are hands on, can engage, empower and lead our catering team and deliver a successful high quality service to our clients. The Role Provide breakfast, crib lunch, desserts or dinner service for residents on site (be able to work both night shift and dayshift on a rotating roster) Ensure food presentation, product presentation and meal service are to Sirrom standards Work within budgeted food costs Maintain minimal food wastage Prepare and serve meals according to the menu and Sirrom Guidelines in line with client requirements Maintain a strict health and hygiene standards and systems in the kitchen We’re looking for candidates with: Must have a minimum 3 years work experience on a remote mine-site village or workforce camps in a similar role Bulk catering experience, hands on cooking of bistro & buffet style services with consistency and excellence in food presentation standards across Breakfast, Crib, Dinner and Desserts, catering from 400 to 1000 residents. Must be "on the tools" Head Chef with the ability to lead and deliver high quality service, food service and preparation methods. Experience working in remote locations and cyclic rosters (desirable) Ability to collaborate with a team environment of Chefs, Kitchen Hands and Dining Room Employees and the ability to empower your team for success. Strong food costing and budgeting control for ordering and stock take control. Problem solving skills with ability to remain calm under pressure. Ability to enforce a strict health and hygiene standards and systems in the kitchen. Must have a current open driver's license To be considered, you must have or be willing to obtain: Chef Trade Certificate - Australian Trade Qualification (Minimum of Cert IV in Commercial Cookery or higher or Trade qualified with extensive catering management experience) Food Safety for Supervisor's Certificate (desirable) Proof of current Right to Work in Australia National Police Check - no more than 1 month old To be able to pass a pre-employment medical and drug screening White Card (advantageous) Standard S11 certificate (advantageous) COAL BOARD MEDICAL (advantageous) S1, S2, S3 and G2 preferred or willing to obtain (advantageous) ISI induction (advantageous) 4wd certificate (advantageous) The successful candidates will have strong experience in a fast-paced Catering operation. If you have proven bulk cooking experience, have fly-in-fly-out/ drive-in-drive out experience and can work well under pressure in a medium size kitchen operation, have a creative flare and genuine passion for food, please apply as we would love to speak with you.
