Job Description
Shangri-La Sydney is seeking a highly skilled and enthusiastic Head Sommelier to manage wine service and the wine list in Altitude Restaurant and the Hotel. As the Head Sommelier, you will also manage the operation of Altitude when required, ensuring complete guest satisfaction at all times through the provision of high-quality food and beverage service. About the Role Responsible for pre-shift briefing sessions and product knowledge within the outlet with regards to the Altitude wine list. Closely monitors the quality of wine and service to ensure consistently high standards at Altitude restaurant and other food and beverage outlets and banquets. Constantly checks the quality and quantity of beverages served to guests to ensure compliance with the standards of the hotel and liquor laws in NSW, enforcing RSA whenever required. Conducts daily meetings and briefings to explain beverage and wine items, discuss aspects of wine service and its presentation, and review complaints and comments received. Supervise Altitude restaurant service associates in all aspects of daily operations, providing necessary assistance where required. When required, manage and ensure all Altitude restaurant opening and closing duties are carried out in accordance with established procedures. Ensure proper administration and control of the outlet budget, controlling costs and maximizing profits. Closely monitor business forecasts and keep beverage par levels at the required level to minimize costs. About You Proven experience as a Sommelier. Exceptional knowledge of wines, wine regions, and wine pairings. Experience in a 5-star hotel environment. RSA certification is required. Staff supervision and management experience.
