Through its Catering & Hospitality division, VL Catering, we are redefining the catering and hospitality experience by working with some of Australia’s most respected culinary leaders to deliver unique and customised experiences for our valued clients and guests. To support us on this exciting journey, VL Catering is looking for an experienced Venue Catering Manager to lead this multi-faceted food and beverage operation, which includes a new signature restaurant run by renowned Australian chef, restaurateur, and television personality Shane Delia, a vibrant new café concept and state of the art functions, events and conferencing facilities. Reporting to the General Manager, Food & Beverage, the successful candidate will be responsible for leading all aspects of this multi-faceted food and beverage operation and developing the catering & hospitality team through strategic planning, achieving set sales and financial targets and delivering exceptional client and guest experiences. The key responsibilities of the position are: Manage and oversee the operational delivery of the signature restaurant, café, functions and event operations. Manage and develop the functions and events business and ensure that all functions are well integrated into the overall venue operation. Work in close collaboration with the Shane Delia Group, to oversee the signature restaurant. Lead a large casual team of permanent and casual managers, supervisors, team leaders and front of house and back of house staff. Achieve financial goals, specifically revenue, labour and EBITDA. Provide induction and job specific training and development to employees. Facilitate the development and implementation of all necessary quality and business controls. Continually look to enhance the food and beverage offering and overall service experience. Ensure all venue specific policies, standards and procedures are developed, implemented and maintained in accordance with the Company’s Quality, Safety and Environmental Management System. Ensure that all statutory and company obligations are met. The key skills and attributes required are: Strong verbal and written communication skills. Excellent personal presentation, interpersonal and organisational skills. Demonstrated ability to lead a team. Strong problem solving and analytical skills. Ability to work under pressure, to tight deadlines and manage competing priorities. Tertiary qualifications in management, hospitality or similar discipline highly regarded. A strong focus on executing prestigious functions and events. A passion for food, service and creating bespoke functions and events. We are seeking interest from candidates with strong commercial and operational experience and a proven record of managing a similar premium restaurant, functions and events operation. Previous experience in hospitality, catering or food and beverage is essential to undertake this exciting role. In addition to the above criteria, attention to detail, a customer focus, high levels of energy, willingness to work flexible hours across a 7 day roster (which includes evening and weekend work) and a positive ‘can do’ attitude, is what is required to successfully undertake this position.
