The Role :Fully Baked Pty Ltd are seeking a highly experienced Pastry Cook with specialised skills in artisanal pastry-making. This role requires a deep understanding of complex pastry techniques, fermentation, lamination, and working with specialty ingredients. You will be responsible for overseeing the production of a limited but highly curated selection of pastries and baked goods. The pastry cook is responsible for delivering the highest level of service, ensuring exceptional food presentation and quality. Key Responsibilities: Work with specialty ingredients. An understanding of baking, shaping and decorating pastry and bread products. Craft and create a range of high-quality, artisanal pastries whilst maintaining high presentation standards. Prepare and present a variety of pastries and baked goods, showing creativity and expertise, while maintaining quality within the specified cost margins. Ensure strict stock rotation and reduce wastage of pastry ingredients, implementing and maintaining effective stock control procedures. Collaborate with a small, dedicated team of skilled bakers. Experience operating large machines including mixers, ovens, and dough forming machines. Ensure consistent product quality and adherence to health and safety standards - an understanding of HACCP, hygiene practices and following WH&S. Report any issues with pastry production, equipment, or processes to Management in a timely manner. What We're Looking For: Extensive experience (minimum 2 years) in an artisanal bakery or pastry kitchen. Experience in milling using stone mills to produce flour from a variety of grains. A proven track record of working with niche ingredients and traditional international recipes. Ability to work in a fast-paced environment and manage large production volumes while maintaining product integrity. Strong organisational and communication skills. Ability to follow instructions and adapt to competing demands. Self-motivated and adaptable. Follow health and safety protocols, policies, and procedures related to food and workplace safety.
